All I could think was "You don't look like you have any horrible disfiguring scars.... so clearly this story had to have had a happy ending."

And during the video, watching him put the ice into the frying I cringed.

Apparently the water at the bottom lets the oil maintain a stable gradient; it's 160+ at the top, just right for frying, but cools quickly enough that water doesn't have time to flash-boil before it reaches the interface. Now, my question is, was it genius or insanity that prompted the guy to work ten years on a better, cleaner fryer and then put five goldfish in the bottom of it? :)

Reading down through the commentary, apparently the whole thing is actually a publicity stunt. The Water Fryer Company, which makes the device, developed a way to make a deep-fat fryer with a layer of water beneath the hot oil so that leftover bits of material fall into the water instead of staying in the oil and burning, which keeps the oil cleaner. Having a fish in the water under the oil proves that it really is water underneath the oil.
